We made this wine in 2015 and waited for more than 6 years until it was ready for release. It is now a fascinating wine: not a fresh rosé, but a savory one, redolent of rose petals and dried herbs and the salt sea. The mousse is fine and subtle, not forceful or obvious. It has all the verve necessary to be a party wine, but the quiet subtlety to begin, and not just end, a dinner.
