We have always milled the different harvests separately. For the first time ever, we have kept the millings separate and will bottle them separately.
This oil was made mostly from all seven varieties in the orchard, picked on October 29. It is the more dense of the two remaining oils, richer and rounder. We felt that it went better with the rich, whole wheat bread we used for the comparative tasting.
We will offer only 100 bottles of this oil.
