We have always milled the different harvests separately. For the first time ever, we have kept the millings separate and will bottle them separately.

This pick was made about two weeks after the 3d pick, predominantly from the late-ripening Koroneiki olives. 

I have secured 10 gallons of the oil from this pick. This batch, as you can imagine, is much more ripe and rich than the first three pressings. Nonetheless, the oil stays true to the fresh and graceful nature that the oils always have had.

We will offer only 50 bottles of this oil.

This will ship after we bottle on about 12/20 and will NOT be available before Christmas unless you pick up from us.
